Got Fish?

I do. A whole freezer full. So what is a girl to do with a 50 pounds of rock cod? She makes fish tacos of course! Since I think fish tacos are pretty much a So Cal thing, I will now school you on a perfect fish taco:


Start with a steamy corn tortilla


Throw on a few pieces of beer battered fish


Smother the fish in a your "special white sauce"
I use crema, plain yogurt, lime, minced cilantro,
garlic salt and white pepper (everything is to taste,
I don't measure)


Add some cabbage


A little cheese, some Cholula, and a squeeze of lime


ENJOY!

I think I love you! Seriously, those look good. Did you try the crunchy chilaquiles recipe yet? Cholula is my favorite; my whole family's. I once bought my brother a whole case of cholula (they have a website) for my brother's birthday. 12 large bottles. They lasted one year. That's how much he loves it.

Yummmyyyy! I only had fish tacos once, and they did not, I repeat did not, look like that.

Didn't get your email, sorry! I do have a 50mm macro and used it for most of the extreme close ups you saw (dew drops,etc), but almost all of those (except the nature photos) were shot with my 50mm regular lens, which has an f/stop of 1.8, better than my macro. And now I know how to shoot inside without a flash, change my white balance (so it looks more natural), etc. The class is helping so much. I'm ready for 10 megapixels though so I can blow my stuff up to larger than an 8x10 without losing clarity! I also have a standard wide angle zoom and a telephoto (I use that one least of all).

Thnks for the instructions...I'm going to try those! I've been wanting to make fish tacos like that since eating at Taco Surf in Pacific Beach on a roadtrip. We've got an awesome local fish taco place high above Vail in a town called Red Cliff, CO (pop.about 30), but they make theirs differently.
